This Week’s CSA Box: Simple Meals from Fresh Farm Ingredients

One of our favorite parts of the CSA season is helping you turn fresh produce into easy, comforting meals your family will actually eat. This week’s box is full of versatile staples that work for breakfast, lunch, and dinner—whether you’re cooking from scratch or keeping things simple.

🌱 This Week’s CSA Includes:

  • Eggs
  • Onions
  • Cauliflower
  • Yellow squash
  • Collard greens
  • Kale
  • Meat add-on: Bacon or Ground Beef

Below are simple recipes using what’s in your box—no fancy ingredients required.


🥚 Farm Egg & Greens Skillet

Uses: Eggs, kale or collards, onion

Ingredients

  • 1 bunch kale or collard greens (chopped)
  • ½ onion (sliced)
  • 4–6 eggs
  • Olive oil or butter
  • Salt & pepper

Directions

  1. Heat oil in a skillet over medium heat.
  2. Sauté onion until soft and lightly golden.
  3. Add greens and cook until wilted.
  4. Make small wells and crack eggs into the pan.
  5. Cover and cook until eggs are set to your liking.

Great for breakfast-for-dinner nights.


🥓 Bacon Roasted Cauliflower & Onions

Uses: Cauliflower, onion, bacon (meat add-on)

Ingredients

  • 1 head cauliflower (cut into florets)
  • ½ onion (chunked)
  • 4 slices bacon (chopped)
  • Olive oil, salt & pepper

Directions

  1. Preheat oven to 425°F.
  2. Toss cauliflower and onion with olive oil, salt, and pepper.
  3. Sprinkle bacon over the top.
  4. Roast 25–30 minutes, stirring once, until crispy and golden.

Perfect side dish or add a fried egg on top for a full meal.


🥩 One-Pan Ground Beef & Yellow Squash Skillet

Uses: Ground beef, yellow squash, onion

Ingredients

  • 1 lb ground beef
  • 2 yellow squash (sliced)
  • ½ onion (diced)
  • Salt, pepper, garlic powder

Directions

  1. Brown ground beef in a large skillet; drain excess fat if needed.
  2. Add onion and squash.
  3. Season and cook until squash is tender.

Serve over rice, in tortillas, or as-is.


🌿 Simple Southern-Style Collard Greens

Uses: Collards, onion, bacon (optional)

Ingredients

  • 1 bunch collard greens (chopped)
  • ½ onion (sliced)
  • 2 slices bacon (optional)
  • Salt & splash of apple cider vinegar

Directions

  1. Cook bacon in a pot if using; remove but leave drippings.
  2. Add onion and sauté until soft.
  3. Add collards, salt, and a splash of water.
  4. Cover and simmer 25–30 minutes until tender.
  5. Finish with a splash of vinegar.

🥬 Easy Kale Chips (Kid-Friendly!)

Uses: Kale

Ingredients

  • Kale leaves
  • Olive oil & salt

Directions

  1. Preheat oven to 375°F.
  2. Toss kale with olive oil and salt.
  3. Bake 10–15 minutes, flipping once, until crisp.

A great snack or lunchbox addition.
