This Week’s CSA Box: Summer Favorites + Easy Eggplant Ideas 🍆🌽🍅

This week’s CSA shares are packed with beautiful summer produce straight from the farm! Expect specialty potatoes, Asian eggplant, lemons, beefsteak tomatoes, kale, sweet corn, and a spicy little hot pepper tucked into your box.

We know eggplant can sometimes feel intimidating if you’ve never cooked with it before — but don’t overthink it! Asian eggplant is actually one of the easiest vegetables to prepare because the skin is tender, the flavor is mild, and it cooks quickly. No fancy recipes required.

Super Easy Eggplant Recipes

Garlic Soy Eggplant

Slice eggplant into rounds or strips. Sauté in olive oil until soft and golden, then add:

  • minced garlic
  • a splash of soy sauce
  • optional drizzle of honey

Cook 1–2 more minutes and serve over rice.

Roasted Eggplant Fries

Slice into long wedges, toss with olive oil, salt, pepper, and parmesan cheese. Roast at 425° for about 20 minutes until soft inside and crispy on the edges. Dip in marinara or ranch.

Simple Grilled Eggplant

Slice lengthwise, brush with olive oil and lemon juice, sprinkle with salt, then grill or pan-cook for a few minutes per side. Top with feta cheese or diced tomatoes.

Sweet Corn Tip 🌽

Fresh sweet corn really doesn’t need much cooking at all! The goal is to heat it through while keeping it crisp, juicy, and sweet — not mushy. Try boiling it for just 3–5 minutes or grilling it briefly until hot. Add butter, salt, and a squeeze of lemon for an easy summer side.

  • Roast the specialty potatoes with garlic and rosemary.
  • Slice beefsteak tomatoes thick for BLTs or tomato sandwiches.
  • Massage kale with olive oil and lemon juice for a simple salad.
  • Add hot pepper to salsa, tacos, or roasted veggies for extra heat.
