🌱 Spring CSA Week 1: Fresh from the Farm

There’s something special about the very first CSA box of the season.

It marks the beginning of longer days, warmer weather, and meals built around what’s growing right here on the farm. This week’s box is full of fresh, versatile staples that are perfect for simple, nourishing meals your whole family will love.

🧺 This Week’s CSA Includes:

  • Potatoes
  • Yellow squash
  • Zucchini
  • Kale
  • Onions
  • Fresh herbs
  • Cabbage

🥩 Add-Ons:

  • Meat: Ground beef
  • Flowers: Sunflower bouquets 🌻

Whether you’re cooking quick weeknight dinners or slowing down for a family meal, this box gives you everything you need to bring fresh flavor to your table.


🍳 Recipe 1: Farmhouse Skillet with Ground Beef & Veggies

Simple, hearty, and perfect for using half your box in one meal.

Ingredients:

  • 1 lb ground beef
  • 2–3 potatoes, diced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • ½ onion, chopped
  • 1–2 cloves garlic (or garlic powder)
  • Fresh herbs (parsley or thyme work great)
  • Olive oil
  • Salt & pepper

Instructions:

  1. Heat a large skillet with a drizzle of olive oil.
  2. Add potatoes first and cook until slightly tender (about 8–10 minutes).
  3. Push potatoes to the side and brown the ground beef.
  4. Add onion, squash, and zucchini.
  5. Season with salt, pepper, and herbs.
  6. Cook until everything is tender and slightly golden.

👉 Tip: Add a fried egg on top for a breakfast version!


🥬 Recipe 2: Southern-Style Sautéed Kale & Onions

A simple, flavorful side that pairs with anything.

Ingredients:

  • 1 bunch kale, chopped
  • ½ onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • Salt & pepper

Instructions:

  1. Heat olive oil in a pan.
  2. Sauté onions until soft.
  3. Add kale and cook until wilted.
  4. Stir in vinegar, salt, and pepper.

👉 Optional: Add bacon or sausage for extra flavor.


🥗 Recipe 3: Fresh Cabbage Herb Slaw

Light, crunchy, and perfect alongside grilled meats.

Ingredients:

  • 2 cups shredded cabbage
  • 2 tbsp chopped fresh herbs (parsley, dill, or cilantro)
  • 3 tbsp white balsamic vinegar
  • 4 tbsp olive oil
  • 1/8 tsp garlic powder
  • Salt & pepper

Instructions:

  1. Toss cabbage and herbs in a bowl.
  2. Whisk dressing ingredients separately.
  3. Pour over slaw and mix well.
  4. Chill for 15–30 minutes before serving.

🥔 Recipe 4: Crispy Herb Roasted Potatoes

A go-to side dish that never gets old.

Ingredients:

  • Potatoes, cubed
  • Olive oil
  • Fresh herbs
  • Salt & pepper

Instructions:

  1. Preheat oven to 425°F.
  2. Toss potatoes with oil, herbs, salt, and pepper.
  3. Roast 25–30 minutes until crispy and golden.
